By The Farm

Frozen Pineapple Sage Honey Cocktail

This frozen pineapple cocktail blends tropical fruit, fresh lime, vodka, and an herbal Sage Honey syrup into a smooth summer drink. The recipe makes four servings and includes extra syrup for another batch or for sweetening iced tea and sparkling water.

Makes: 4 cocktails
Syrup cooling time: 30 minutes

Sage Honey Syrup

Frozen Pineapple Cocktails

  • 4 cups frozen pineapple chunks
  • 2 fluid ounces fresh lime juice, about 1/4 cup
  • 4 fluid ounces vodka, about 1/2 cup
  • 1/4 cup prepared Sage Honey syrup
  • 1 1/2 cups ice
  • Pineapple wedges, lime wheels, or fresh sage leaves, optional, for garnish

Make the Sage Honey Syrup

  1. Add the Sage Honey, water, and fresh sage sprigs to a small saucepan.
  2. Warm over medium heat until the mixture begins to bubble, stirring so the honey dissolves.
  3. Reduce the heat and simmer gently for 15 minutes.
  4. Remove from the heat and cool for 30 minutes, then discard or strain out the sage.

Blend the Cocktails

  1. Add the frozen pineapple, lime juice, vodka, 1/4 cup Sage Honey syrup, and ice to a high-powered blender.
  2. Blend until smooth and frosty, stopping to scrape down the sides or add a small splash of water if needed.
  3. Divide among four glasses and serve immediately. Garnish with pineapple, lime, or a fresh sage leaf if desired.

Alcohol-Free Pineapple Sage Slush

Replace the 4 ounces of vodka with 4 ounces of pineapple juice or cold water, then blend as directed. Add more Sage Honey syrup to taste if needed.

Storing the Extra Syrup

Cool the remaining Sage Honey syrup, transfer it to a clean airtight container, and refrigerate for up to 1 week. Stir it into iced tea, lemonade, sparkling water, or another batch of cocktails.

Why Sage Honey Works

Sage Honey has a mild herbal-floral character that complements pineapple and lime while echoing the fresh sage used in the syrup.
