Ingredient characteristics at a glance

A culinary guide to Ceylon cinnamon
Characteristic Ceylon cinnamon
Ingredient type A spice made from the inner bark of the Ceylon cinnamon tree.
Ingredient flavor Warm, aromatic and gently sweet, complemented by honey's sweetness.
Suggested pairings Apples, bananas, oats, coffee, tea and vanilla.
Kitchen inspiration Breakfast drizzles, smoothies, fruit sauces and baked oats.

Ceylon vs. Traditional Cinnamon: What's the Difference?

“Traditional cinnamon” is not a specific botanical name. It often refers to cassia-type cinnamon, the familiar bold cinnamon used in many kitchens. Ceylon is a different type, often called “true cinnamon.” Both are culinary spices made from tree bark.

Characteristic Ceylon cinnamon Cassia-type cinnamon
Flavor Generally delicate, gently sweet and subtly aromatic. Generally stronger, bolder and more pungent.
Whole-stick appearance Thin, papery layers rolled into a quill. Thicker, harder bark with fewer rolled layers.
Kitchen inspiration Try when you want a gentler cinnamon note in drinks, fruit dishes and breakfast bowls. Try when you want a more pronounced cinnamon note in baking and spiced dishes.

Our infusion uses Ceylon cinnamon paired with raw American honey. These are culinary distinctions, not a claim that one type offers greater health benefits.

While buckwheat is my favorite and I do love the chai honey. I am in love with the dark cocoa, honey. I use the buckwheat and chai in tea. I use the dark cocoa sometimes in coffee. However, I make overnight oats and I use the chai and the dark cocoa in the overnight oats. However, I must admit that I use the blackberry in the overnight oats as well. The buckwheat I used during the winter most I use it year-round, but mostly during the winter during cold and flu season , as it is well known that buckwheat has great health benefits. A tablespoon a day can help to keep the doctor away. It’s great when you have a cold or sore throat.. back to the Chai and Cocoa I also use them with waffles topped with bananas and then drizzled with the honey as a snack. Sometimes I will do peanut butter, bananas, and the honey. If I’m training hard I’m working out hard. I’m done bragging about the honey because then I will never be able to get it. I would suggest when you buy the buckwheat that you get as larger bottle as you could afford we’re even subscribe. OK, that’s enough. They don’t pay me for this I pay them. With that said it is so worth it. I have been purchasing from them many many years and so is my family I’ve been purchasing from them for so long. I can’t remember 6 or 8 years. I’m not sure.. give them a try you won’t be disappointed oh, I also use the honeys when I barbecue I also use the garlic and the turmeric and at one point I purchased two cases of the cinnamon honey and gave them away as gifts people love that. OK, I’m done as I said. I keep talking it up. I’ll never be able to purchase any. They’ll always be out of stock.. love my weeks, honey don’t buy any other. Thank you from Oconee County South Carolina.
